West Lake fish in vinegar sauce, xihu cuyu (西湖醋鱼), usually begins with a live grass carp. Scoring helps the thick back, thin belly, and meat near the skeleton cook at a similar pace. The finished fish keeps its complete outline and has no fried crust; properly cooked flesh separates along the grain while retaining moisture.

The cut surface also provides clues to technique. Intact skin, clean flakes, and little cloudy liquid on the plate suggest controlled water temperature and timing. Taste the firmer back and softer belly to compare how one cooking method handles different parts of the fish.

Rose rice vinegar shapes the aroma

Hangzhou's current culinary standard uses rose rice vinegar, sugar, Shaoxing wine, and ginger as key seasonings. “Rose” describes the vinegar's colour and aromatic style, not flower petals. Vinegar rises first in the steam, sugar rounds the acidity, and wine and ginger support the freshwater flavour underneath.

Restaurants vary in acidity, sweetness, soy colour, and sauce thickness. A thin glossy coating keeps the fish central; a sweeter or more concentrated version makes the sauce more prominent. Those differences reveal a kitchen's approach to one of Hangzhou's most debated classics.

Stories connecting the dish to Sister Song and “uncle-and-sister-in-law” legends remain part of local food culture, although surviving Southern Song records relate Sister Song more clearly to fish soup. The modern grass carp, scoring, and sweet-vinegar sauce have a firm contemporary standard even where the origin story remains layered.
