Hot and Sour Sweet Potato Noodles

Springy sweet potato noodles carry vinegar, chilli oil and Sichuan pepper, with peanuts, fried soybeans and preserved vegetables adding crunch. The result is bright, hot, numbing and textured rather than simply sour soup.

Sweet potato starch creates the defining bite

The noodles are formed from sweet potato starch, traditionally including a process in which batter drops into hot water and sets into strands. Cooked noodles are translucent and slippery but retain a clean spring. Genuine sweet-potato noodles can be slightly dark or uneven rather than glass-clear.

Sour, hot, fragrant and crisp arrive together

Vinegar gives the broth a bright opening; chilli oil follows with heat, Sichuan pepper adds numbness, and soy or stock supplies savoury depth. Peanuts, fried soybeans, preserved mustard, sesame and fresh herbs interrupt the smooth noodles with crunch and toasted aroma.

Shops may serve a full soup bowl or a drier mixed version. Minced pork, beef or pork intestine can be added as toppings. Mix from the bottom, and specify acidity, chilli and pepper separately if the shop offers adjustments.

Flavour note

The dish combines pronounced vinegar acidity, chilli heat and Sichuan-pepper numbness. Intestine-topped versions contain pork offal.
